Pan Seared Quail with Shaved Truffle Potatoes

Hello, sorry I’m late. I’ve been working on the wine tasting for Thursday night. Once I confirm which ones will actually show up and which ones are pipe-dreams, I will let everyone know. Again, and I know I’ve been repeating myself, but you’re gonna want to come to this one. Outside of that, I may need all of you to message my Macroeconomics and Spanish professors en masse, because instead of studying for two different exams that are tomorrow, I have been looking at wines and doing the weekly message. Probably does not bode well for my future schooling. But maybe if you guys let them know how crucial it was that I get this message and tasting done, because otherwise people wouldn’t have gotten to read my message until tomorrow night and they also wouldn’t have been able to drink as fancy a level of burgundy on Thursday. Really important stuff, obviously.

The special this week is Pan Seared Quail with Shaved Truffle Potatoes & Creamed Spinach and a Green Chili Tomato Sauce. We haven’t done a Quail special in a long time, and I know there’s a lot of y’all that love it. Remember all the different types of Quail we’ve done throughout the years. It’s one of the few things I get nostalgic over. Reminds me of Heather.

Tuesday’ we’re doing nothing special because I said so.

Wednesday we’re doing a cocktail tasting, this time in the spirit of summer. I figured we’d use some berries and citrus and light/floral flavors. The things that work well despite it being 130 degrees outside. So, in light of that, the cocktail tasting will feature a Spiked Raspberry Lemonade, a Blackberry Cucumber Gimlet and Jalapeno Rose Palomas. I doubt it’ll truly do anything about the heat, but maybe you’ll be so drunk that you don’t care that it’s miserable outside.

Thursday’s wine tasting, as promised, will be Burgundy. I told you that you’d really want to come to this one. I don’t usually do tastings that are Pinot Noir dominant because some of the people that come to our tastings aren’t fans of pinot, so I try not to do too many and irritate them. I’m a very considerate person, despite what my wife, family, friends, acquaintances and strangers on the internet say. I will send out the specific tasting notes when I get a hard confirmation on specific wines, but just know that I will make damn sure that all of these wines are good. Burgundy is special to me, and I don’t get to do them often enough for my liking, so I’m gonna make it count. You should come in. And if you don’t make it, we’ll all make sure to tell you just how great it was and how much you missed.

I’ve rambled on long enough, and Mom is all the way across the room, so it’s not even worth finding out if she has anything to say in the message. Let’s just call it a day.

Tonight’s Syrah Tasting

The Syrah tasting tonight will be at 7:00pm and I wanted to give everyone a look at the tasting notes beforehand, so I have attached them to this message. We have one from South America, one from California, one from Australia, and one from France. If you’re interested in the different expressions of Syrah and how truly different it can taste depending on where it’s grown, tonight would be a good night to come in. Also, don’t forget that next week’s wine tasting is going to be Burgundy and it’s going to be spectacular. You need to come to that one. I seriously cannot recommend it enough. I’ll let everyone know what the specific wines are, but try to trust me. I’ve never steered you wrong, yet.

Gin Cocktail Tasting Tonight

Hey, guys. Just a heads-up, for tonight’s cocktail tasting, we’ll be doing 3 gin-based drinks. The idea is that one will be classic, one will be modern and one will be weird, all in an effort to allow you to taste the wonderful world that gin has to offer. In light of that, the classic one is a Tom Collins, the modern one is a Cassis-Rhubarb Sidecar and the weird one is a Barbary Coast. We’ll be doing them all through dinner service, tonight, so come get some.

Steak & Shrimp Risotto

Hey guys.

I am at a loss for words, for some reason. It seldom happens to me, thankfully for the rest of the world, but even greatness takes a day off once and a while. So, let’s just get right to it, shall we?

The special this week is Steak & Shrimp Risotto with a White Wine Lemon Sauce. It’s been a long time since we’ve done risotto, because it’s a pain in the butt to make. Heather used to do it every once and a while, but even she didn’t do it often. So, you know, get it while you can.

Wednesday, we’ll be doing a cocktail tasting all through dinner service. We’ll do all gin cocktails, but give you a chance to experience how different gin can taste depending on what you do with it. I figure we’ll do one cocktail where we try to cover up the gin a bit, one that’s a lot more traditional to taste what gin historically has tasted like and one that’s a bit more experimental.

Thursday’s Wine Tasting will be a Syrah tasting. We’ll do 4 Syrah from 4 areas. And we’ll make sure to include the Rhone Valley in the list of wines. Rhone Valley Syrah is my jam. I may use a Syrah heavy blend if I feel like that’s the best way to taste from a specific region, but hopefully they’ll mostly be Syrah. Next week will be Burgundy, and with Pinot Noir being my favorite grape, I am gonna make it count. So just be on the lookout for next week’s tasting, because I’m gonna make it killer. Also, I have an idea for a deconstruction tasting in the next few weeks. Basically, we’ll taste a blend and then taste all the grapes that go into that blend, as well. It’s going to be a tough one to put together, because it’s always difficult to find single varietal wines in regions that focus on blends. I’m going to do my best, but it may take me a few weeks or more to get that put together. Assuming I can actually get it done, we’ll make it a special occasion. Anyway, remember, next week is a Burgundy Tasting!

Chipotle Encrusted Mahi-Mahi

Hello, everyone.

I have a literal butt-load of homework and our fridge went out and we have a couple of big parties tonight, so I have less than zero time to be messaging everyone. Everything’s back to normal this week, for better or for worse.

Special this week will be Chipotle Encrusted Mahi-Mahi with Cilantro Rice and a Lime Butter Sauce.

Tuesday, I supposed I don’t have time to do any specials, so let’s try again next week.

Wednesday, we’ll be doing a cocktail tasting. I’ll send you cocktails, tomorrow, so you guys can get a head start on if you’re interested.

Thursday’s Wine Tasting will be all South American wines. We’ll do one white and three reds. Ideally a more traditional blend, a weirder blend and a single varietal. I’ll give you more information later this week, but no matter what they are, they’ll be damn good.

I’m shocked I even typed as much as I did. Count your lucky stars.

Cabernet Sauvignon Tasting, Tonight!

To anyone who forgot or didn’t know in the first place, we are doing an all Cabernet Sauvignon wine tasting tonight at 7:00pm. I have attached the tasting notes and scores to this message so you guys could get an idea of what we’re doing and you don’t have to come in blind. I found 4 very different Cabs from 4 very different countries that all fit what I was looking for and kept a certain level of quality that I needed. I think it turned out quite nicely, personally. I’ll stop blowing smoke, now.

Just take a look at the tasting notes and decide for yourself. If you want to come in, it’s tonight at 7:00pm. Plus we’re totally doing 80’s music all week! Bowie, Tears for Fears, U2, Duran Duran, Queen, etc. It’s upbeat and awesome. It makes me feel old and young at the same time. See you, tonight!

Welcome back, Cotter (Bizzi’s)!

Guess who’s back, back again? Bizzi’s back, tell yo friends.

We’re back from our weeklong closure and hopefully ready to rock (I can’t lie, we’re not even close to ready to rock. We’re dragging so badly. It always happens, and we don’t really feel normal until week 2 of being back). So, let’s do this! You know you missed us, how could you not? Come in for your Bizzi’s fix.

Tuesday, we’re not doing anything special, because we’re having enough trouble just getting up the energy to open for regular dinner service. Plus we’re gonna be slammed.

Wednesday, you can order 2 glasses of any bottle on our menu (under $200, with a cork) for half the price of the bottle. If you’ve been itching to try a wine on our list, this would be the time.

Thursday, we’re doing an all Cabernet Sauvignon tasting. So Cabs from around the world. Obviously the US will be represented, but I’d like to try to let people taste a South African Cab and maybe an Australian Cab, as well. We’ll see how it goes. Either way, I’ll send everyone the tasting notes tomorrow or early Thursday.

I don’t know if there’s any Bizzi’s Cellar news because Elaine is in Ireland, surely drinking heavily, and out of pocket. Let’s just assume that’s a “no”.

We will be closed the first week of July

Just a friendly reminder to everyone that we will be closed the first week of July, for our annual vacation/deep-cleaning and general shenanigans. From Tuesday, July 2nd to Saturday, July 7th we will be doing a combination of working on ways to improve Bizzi’s, scrubbing down the restaurant, getting a chance to spend time with our families and, most importantly, drinking.

We will re-open for normal business hours on Tuesday, July 9th at 11:30am. It’ll be like we were never even gone. Don’t try to fight back the tears, we know you’ll be missing us dearly, but we have to have this week of off-time, so that we don’t snap and go postal. You’ll thank us in the long run. Besides, absence makes the heart grow fonder.

Don’t you forget about me!

Don’t forget, we’re closed all of next week, so if you want your Bizzi’s fix, you gotta come in today or tomorrow. I don’t wanna bug you, but I don’t want you guys to miss out on the awesomeness that is me! It’s dangerous to go more than a week without your regular dose of Michael. So just keep that in mind. It’s just common sense.

Tonight’s Wine Tasting

Don’t forget, tonight’s wine tasting will be all American wines as a celebration of Independence Day. The wines are each a great example of a classic wine from a famous region in the United States. I wanted to get wines that truly represented what we think of when we think of American wine. The tasting notes are included in this, so feel free to take a look.

One caveat, due to a mix-up I got less quantity than I was expecting so I can only do 12 tastings of the wines that are included in the tasting sheet. If you’re coming, it’d be a good idea to call and let us know. I think you’ll want to try it.
